Pleased that he now finally stood before the judges, Julian, with buffet cart in front of him, with yet another with a portable mini oven to his left,he began his tale of the finer points of brownie making as he tied a blue and white bib apron about him he began.
"Your first step," reaching a hand to the oven,"is to set the oven to 350 F. then to grease the size of pan. Which I have already did as we came in before you this evening." saying as he held up the 8" square pan for the judges to view. "For this recipe you will need,
3/4 C. Hershey Cocoa Powder,sifted
1/2 tsp. baking powder
2/3 melted butter unsalted & divided into two 1/3 C. portions
1/2 C boiling water
2 C. sugar
1 1/3 C. all purpose flour
1 tsp vanilla extract
1 tsp salt
1 C semi sweet or special dark chocolate chips "
Julian bent down at the waist slightly after reading off the ingredients,coming back up with a large metal bowl, he continued;
"Since you have preheated your oven and prepared your pans, you are now ready to mix up your batter. In a large bowl you will mix together your sifted cocoa powder and baking powder. Then add the first 1/3 cup of melted butter til the cocoa mixture is well mixed, then add your boiling water and stir all until this thickens." Julian paused as he stirred the cocoa mix and when it had thickened, he began again.
"At this point, you will add the sugar, eggs, and remaining 1/3 cup of melted butter and stir until smooth." As he stirred the mix, Ninui came up to the buffet tray and placed a mixer, which sat on it's own small table equipped with it's own power source beside the first one. Giving her a short smile, he continued;
"Empty wet ingredients into your mixing bowl and beginning on low speed,gradually add flour,vanilla,and salt. When wet ingredients have incorporated enough dry, mix all on medium speed of mixer until just blended". When this was completed, Julian stopped his mixer, removed the bowl and returned it to the tray before him. "With a soft scrapper, fold in your chocolate chips, I am using semi sweet in this batch," he added looking to the judges as Ninui came up with his prepared pan. Setting it down,Julian tilted the bowl over it, "using your soft scrapper, scrape all of your mix into the pan. Spread mix evenly and place in the oven for 30 to 35 minutes." Julian turned to the fully heated oven and placed the brownies inside and set the timer for 30 minutes and faced the judges once again.
"Now brownies are delicious without a topping at all but who really wants that"? he said with a clap of his hands and a smile . "So for you now, I'll be preparing a Chocolate Buttercream Frosting and for it's ingredients you will need
1 stick of unsalted butter softened to room temperature
2 2/3 C. of sifted powdered sugar
1/2 C. Cocoa powder, sifted if lumpy
1/3 C. milk
1 tsp. vanilla extract"
Ninui,who had removed all other previous equipment as Julian spoke, now set the wheel break on the new cart holding the new ingredients and equipment. as he turned on the mixer, he began
"In your mixer bowl,beat your softened butter, on low speed for two to three minutes. Then, continuing on low speed, gradually add the powdered sugar and cocoa powder alternately with the milk. When all dry ingredients have been mixed in, put speed on medium and mix well adding small amounts of milk if needed. Remove bowl from mixer and add vanilla. Fold into frosting till well incorporated."
Ninui came over with three pans just like the one he had put in the oven ten minutes prior and set them before Julian.
"As you will see with the video clip on the tricorders beside you that my assistant Ninui is placing before you, you will note that these pans were made by myself in the private mess one hour ago. The markings on these pans before me are those pans in the video." With that the judges picked up the tricorders and took a hasty view as Julian continued:
"Now that your brownies have cooled, place a serving dish on top of the baking pan and flip them over removing the brownies from the baking pan." Julian did so with all three pans. "Spread your buttercream frosting as generously as you desire on the top of each batch then cut into equal sizes".
He frosted and cut each batch of brownies and plated three on each plate for the judges. On the top, he sprinkled each with a bit of mini morsels of semi sweet and dark chocolate chips.
