portia: I make chicken fried steak at least two times a month and I try not to kill it. The tenderized portions are pretty thin and I only cook them a few moments on each side on high heat to crisp them up. Too overcooked and they can get chewy for me.

Morwenna:  tuna cassarole!! WOOT!!

Rose, your salad and supper sound great. Do you love cooking in your new kitchen and are you used to that new stove/oven?

I went to Olive Garden last night and had the Zuppa Toscana and Chicken Marsala over linguini. I am addicted to that soup. It was just as good as I remembered it to be.

I really have to cook more often. :) That was rather fun, and if we had more clear counter space I would! Hubby claims he can cook in three square inches; not me!!

Hey Morwenna, I am like your hubby, I can cook in any space, large or small. Sometimes a small space is easier, everything within arms length. Also the more space I have, the more toys I tend to buy. ;)

What are you making tonight? Or are you having your tuna cassarole left over? Also maybe it will tighten up for you from being in the fridge.

Enjoy.

So does he!! He put up some secondhand plastic shelves on the window counter a month or two ago and that cleared up a litle but not so's you'd notice. And there's a toaster, a coffeemaker, a mixer, a blender, a food processor, a waffle iron, a water filter, stacks of containers, all the spices (no room in the cupboards), the miscellaneous canisters, the colanders... need I go on? And most of the pots live on top of the stove, or under the window counter along with the canned goods (overflow from the cabinets--he's a mad discount shopper), and the skillets all live in the oven. It really is a small kitchen--no room for a table!

I don't know what I'll eat. I certainly have enough casserole, but I also want it for lunches. 3 more lunches to go during the week, and I have 4 servings left. I'll figure it out when I get home.

It tightened up a little too much. It was drier than I expected (or wanted) by the time I ate my lunch.

LOL. Well my kitchen is a descent size where I live now and I don't think there is a free bit of space along any wall right now. I also have an island and that is full too. I can't help myself. But I can tell you I am prepared with just about any cooking machine/cookware that would be needed in most any situation.

Disaster struck last night. I had my Chicken Marsala from Olive Garden that was take home, mostly the whole order. I heated it up and as I was walking to the table, I tripped and it fell upside down on the carpet and covered about three feet of gooey mess.

I spent a half hour cleaning it up and then just had some bread for supper. I was SO bummed out.

*sigh*

OUCH! That was a shame. It would have been Heaven for my dog, who is a dedicated omnivore (In this case, that means eating everything she can get). At least someone would have enjoyed it.

But, you can get another order of it!

Fishing in the lake on Friday. Hold good thoughts that we catch trout. I LOVE trout.

Thanks portia. I certainly can get some more from Olive Garden. It is just such a complete shock to have something in your hand one second and the next you are looking at it wide-eyed, like how the heck did THAT happen. I wish your dog had been at my house last night. Sticky wet linguini is hard to get out of carpet. I ended up putting a towel over the area, because it was so wet. When I get home tonight, I will clean it again and vaccuum it. pffffft.

Good luck on catching the trout, I love it too. Also portia, this probably isn't something that is of any importance to you, but you are almost at 5,000 posts which is Mariner status. We usually raise a thread for that, would that be okay with you?

Rose I love Wilted Salad!! Its been years since I have had it but I used to help a lady I knew when she would make it. Cutting or breaking up all the crisp bacon and keeping the grease warm till the salad was all put together. Oh yum!!! The memories. :D So how is the new kitchen??

Gosh I am so hungry and I want my shrimp fried rice!!!

Vanadarlin', totally agree with you there.

Last night was breakfast as I thought. I had an omelette with sausage, roasted red peppers and brie. Then I made some southern fried taters to go with. It was very tasty. I just wasn't in the mood to make the pancakes. To muggy and humid last night.

Tonight is swillin' with the chicas at the local tavern.

How about you?

Hubby's back! Wa-Hoo!! :D

Not that the food's been much! We've been rather busy...

Friday night I had the last of the casserole then ran out to a meeting. Saturday he came home in the afternoon and we had a bite out while running an errand. Today we had a nice country breakfast (for lunch) and tonight we snacked--but he made an apple crisp this evening, and made up the cookies from the batch of dough he moved from the freezer to the fridge before he went into the hospital. At least we have desserts! :P

Hey Morwenna. Glad the hubby got back and I suppose that everything went okay with him stay. Good news then.

For the weekend, on Friday I had grilled chicken, Saturday I had steak and lobster and last night I had a hamburger and home fries with baked beans.

Went out to Estacada (3 hours round trip) to buy 6 - SIX...heirloom tomato starters, that were beyond starters, but we shall see. Got them hanging now upside down in the Topsy Turvy. The tomato guys said that by the end of July, the cherry-like ones will be ready and end of August two of the larger varieties. He also gave me a purple basil plant. :D It SMELLS so good.

I don't know what you put purple basil in, but I will find something.

Hope everyone had a scrumptious weekend.

Can't you put it into anything you'd put green basil into? Or are they different species? I'd say, anything called basil just has to be delicious!

Good luck wih the tomatoes. It's times like this I wish we had our own garden. Native tomatoes are the best!

Hey Morwenna, I did some checking and indeed you can put the purple basil in anything you would put the normal green variety in. I just don't recall seeing purple basil in anything. It is REALLY purple too. And I have it next to a green basil plant and the purple is twice the smell factor. So I will try it on the next fresh dish I make. :D And report, of course.

These tomatos will not be in a garden, but hanging in an upside down thingie off the side of the eave of the house. I don't know if you can do that at the units where you live, but it is not too expensive to get, just getting late in the season for planting. We are right on the verge for our area.

Rwhen.. sounds like you've been eating like a queen. I'd put purple basil in anything you'd put regular basil in. Or at least try it.

I didn't get any tomatoes or any thing planted in the garden this year. :( Too busy. So it will have to be farmers market for me.

Farmers market is a good thing all the way around. I don't know about you Rose, but ours is VERY reasonable and always has such yummy veg and other stuff too. I am going by there tonight after work, I am hoping that they are filling up. It is still a bit early in the growing season for them to have everything they normall have, but I am sure I will drop some coinage there.

:D Sounds like your mexican soup was delish. You should leave the recipe when you have the time for posting.

rwhen, I sent this to you in a PM.. but I'll repost the recipe here.

Mexican Chicken black bean soup

It was a recipe that I found in one of those weekend magazines that come in the Sunday post. I made it once according to the recipe.. and it was very good, but now I don't know where the recipe is.. or what it was called.
I had most of a roasted chicken in the fridge so boiled/simmered that. I removed the chicken from the pot, deboned it & threw the chicken back in the broth. I added about 4 cans of black beans (or you could use dry, of course). A can of diced tomatoes. About 2 -3 cups of homemade salsa (you could use store bought) about a 1/2 large onion & a tablespoon garlic 'sweated' in a bit of olive oil. I put in some extra fresh cilantro & parsley. and about 2-3 cups corn (frozen). I could have added some diced zucchini if I had some.. but I didn't. Oh.. and I added about 1/2 cup or so of pearl barley. Salt & pepper to taste. The salsa had cumin in it.. so, if your salsa doesn't have cumin I'd add some of that. You could even add a bit of turmeric. That's supposed to be good for you. If you can't tell.. I'm not much of a 'recipe' cook... but stuff generally turns out. ;)
